HOW TO COOK IT?
Roast Beef Diaphragm with Potatoes and Vegetables
Ingredients:
- 800g of beef diaphragm
- 4 medium potatoes, cut into wedges
- 2 medium carrots, cut into rounds
- 1 medium onion, thinly sliced
- 3 cloves garlic, finely chopped
- 2 tablespoons of olive oil
- Salt and Pepper To Taste
- Fresh aromatic herbs (rosemary, thyme, sage), chopped
- Meat broth or red wine (optional)
Method:
- Preheat the oven to 180°C.
- First of all, prepare the beef diaphragm. Be sure to remove any excess membranes or connective tissues. Then, with a sharp knife, make shallow incisions on the surface of the diaphragm. This will help tenderize it and allow the spices to penetrate better.
- Season the beef diaphragm with salt, pepper and chopped herbs. Massage the spices well into the surface of the meat.
- In a large, ovenproof skillet, heat the olive oil over medium-high heat. Add the onion slices and carrots and cook for about 5 minutes, until tender and lightly browned.
- Add the potato wedges and minced garlic to the pan. Mix the vegetables well and distribute them evenly over the bottom of the pan.
- Place the seasoned beef diaphragm on top of the vegetables in the pan.
- If you want more flavor, you can add a little beef broth or red wine around the meat in the pan.
- Cover the pan with an ovenproof lid or foil.
- Transfer the pan to the preheated oven and cook for about 2 to 2.5 hours, or until the beef diaphragm is tender and easily cut with a fork.
- During cooking, check the moisture level in the pan from time to time and, if necessary, add a little broth or wine to prevent the vegetables from drying out too much.
- Once cooked, remove the pan from the oven and let the beef diaphragm rest for a few minutes before slicing.
- Serve the roast beef diaphragm hot, accompanied by the vegetables, potatoes and carrots.
