HOW TO COOK IT?

Ingredients:

  • 1.5-2 kg braising meat (e.g. beef shoulder or leg), cut into pieces
  • 2 medium onions, chopped
  • 2 medium carrots, cut into rounds
  • 2 celery sticks, diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 sprigs of fresh rosemary
  • 2 sprigs of fresh thyme
  • 500 ml robust red wine (e.g. Chianti or Barolo)
  • 500 ml of meat broth
  • 2 tablespoons of tomato paste
  • 2 tablespoons of flour
  • Extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

Method:

  1. Meat preparation:
    • Dry the pieces of meat well with kitchen paper and then salt and pepper them generously.
    • Dredge the meat in the flour, shaking off the excess.
  2. Browning the meat:
    • In a large pot or saucepan, heat some olive oil over medium-high heat.
    • Brown the pieces of braising meat on all sides until they are golden brown. Do this in batches if necessary to avoid overcrowding the pot.
    • Transfer the browned meat to a plate and set aside.
  3. Fried:
    • In the same pot, add the onions, carrots and celery. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the vegetables are tender and lightly browned.
    • Add the minced garlic and cook for another 1-2 minutes.
  4. Brazing:
    • Pour the red wine into the pan and scrape the bottom well with a wooden spoon to free any residues of meat and vegetables.
    • Add the tomato paste, bay leaves, rosemary and thyme. Mix well.
    • Return the browned meat to the pot and add the beef broth until it covers the meat by about half. Bring to the boil.
  5. Slow cooking:
    • Reduce the heat to low and cover the pot with a lid.
    • Let the meat braise on low heat for about 2-3 hours, or until tender and flakes easily with a fork.
  6. Service:
    • Once cooked, remove the bay leaves, rosemary and thyme from the pot.
    • Serve the braised beef hot, accompanied with mashed potatoes, polenta or grilled vegetables. You can also serve the braising sauce as an additional condiment.
