HOW TO COOK IT?
Here's a delicious recipe for cooking Limousine muscle:
Limousine Steak in Red Wine with Polenta
Ingredients:
- 1 kg of Limousine muscle
- 2 tablespoons extra virgin olive oil
- 2 medium onions, finely chopped
- 2 medium carrots, sliced
- 2 celery ribs, diced
- 4 cloves garlic, minced
- 2 bay leaves
- 2 sprigs of fresh rosemary
- 2 sprigs of fresh thyme
- 500 ml of robust red wine (e.g. Chianti or Barolo)
- 500 ml of meat broth
- Salt and freshly ground black pepper to taste
- Flour to taste (optional, to flour the meat)
For the polenta:
- 250 g of corn flour
- 1 liter of water
