Red Wine Limousine Muscle with Polenta

Ingredients:

  • 1 kg of Limousine Muscle
  • 2 tablespoons extra virgin olive oil
  • 2 medium onions, finely chopped
  • 2 medium carrots, cut into rounds
  • 2 celery sticks, diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 sprigs of fresh rosemary
  • 2 sprigs of fresh thyme
  • 500 ml robust red wine (e.g. Chianti or Barolo)
  • 500 ml of meat broth
  • Salt and freshly ground black pepper to taste
  • Flour to taste (optional, to flour the meat)

For the polenta:

  • 250 g of corn flour
  • 1 liter of water
  • Salt to taste

Method:

  1. Limousine Muscle Preparation:
    • If you wish, you can lightly flour the muscle before cooking for a crispier crust. Shake off excess flour.
    • Heat the olive oil in a large pot over medium-high heat. Brown the muscle on all sides until well browned. Transfer it to a plate and set it aside.
  2. Fried:
    • In the same pot, add the onions, carrots and celery. Cook for about 5-7 minutes, until the vegetables are tender.
    • Add the minced garlic and cook for another 1-2 minutes.
  3. Cooking Limo Muscle:
    • Return the browned muscle to the pot along with the sautéed vegetables.
    • Add the bay leaves, rosemary, thyme and red wine. Let simmer until the wine has reduced by half.
