HOW TO COOK IT?

Here is a recipe for cooking a delicious braided beef roast:

Braided Beef Roast

Ingredients:

  • 1 roast beef (approximately 1.5-2 kg)
  • 4 tablespoons Dijon mustard
  • 2 tablespoons of olive oil
  • 4 cloves of garlic minced
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • Salt and freshly ground black pepper to taste

For the stuffing:

  • 150 g diced smoked bacon
  • 1 medium onion, chopped
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 2 cups breadcrumbs
  • 1 cup beef broth
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. Make the filling: In a large skillet, cook the bacon until crisp. Add the onion, celery and carrots and cook until the vegetables are soft.
  3. Add the breadcrumbs to the pan and mix well to absorb the juices released by the vegetables. Add the meat broth and mix until the mixture is moist but not too liquid. Season with salt and pepper to taste. Set aside.
  4. Prepare the roast: Make deep cuts in the top of the roast, forming slices but not cutting it completely.
  5. Spread Dijon mustard over the sides and top of the roast.
  6. Fill the cuts of the roast with the prepared stuffing.
  7. Weave strips of bacon over the roast, covering it completely. This will help keep the filling in place and add flavor.
