HOW TO COOK IT?
There are many recipes based on sweetbreads: their delicate taste and consistency reminiscent of brains lend themselves to many preparations.
A great classic of Roman cuisine are fried sweetbreads:
- Cut them into pieces of medium thickness.
- Flour them, dip them in the egg and breadcrumbs.
- Dip them in boiling oil and wait for them to brown properly (4-5 minutes will be enough).
- Drain them, place them on a sheet of absorbent paper and salt them to taste.
