HOW TO COOK IT?
Beef tail is a cut of meat rich in flavour, perfect for slow cooking. Here is a recipe for preparing stewed beef tail:
Stewed Beef Tail
Ingredients:
- 1.5-2 kg beef tail, cut into pieces
- 2 tablespoons of olive oil
- 2 medium onions, chopped
- 3 medium carrots, cut into rounds
- 2 celery sticks, diced
- 4 cloves garlic, minced
- 2 bay leaves
- 2 sprigs of fresh rosemary
- 2 sprigs of fresh thyme
- 1 cup of red wine
- 2 cups beef broth
- Salt and freshly ground black pepper to taste
- Flour (optional, to flour the meat)
Method:
- Preparing the meat: If you wish, you can lightly flour the beef tail pieces before cooking. Shake off excess flour.
- Browning the meat: Heat the olive oil in a large pot or saucepan over medium-high heat. Add the beef tail pieces and brown on all sides until golden brown. Transfer the meat to a plate and set aside.
- Sauté: In the same pot, add the onions, carrots, celery and garlic. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
- Slow Cooking: Add the browned meat back to the pot. Add the bay leaves, rosemary and thyme. Pour in the red wine and let simmer until the wine has reduced by half.
- Adding the broth: Pour the beef broth into the pot until it covers the meat. Bring to the boil, then cover the pot with a heatproof lid and reduce the heat. Let simmer for about 3-4 hours, or until the meat is tender and flakes easily with a fork. Be sure to check occasionally to make sure the liquid hasn't dried out too much; if necessary, add a little hot broth.
- Resting and serving: Once cooked, remove the pan from the heat and let the stewed oxtail rest for a few minutes. Remove the bay leaves and sprigs of rosemary and thyme. Taste and adjust salt and pepper if necessary. Serve the stewed beef tail hot, accompanied by mashed potatoes or polenta, if you prefer.
