WHAT CUT DO YOU RECEIVE?
Our pork coppa is a true culinary treasure, versatile and appreciated throughout Italy. Thanks to the numerous veins of fat, this part of the pig's neck is perfect for grilling, which will make it juicy and aromatic.
But it doesn't end there: the coppa is also suitable for the preparation of skewers and thick cut steaks, to be marinated to make the meat even softer and tastier. And if you prefer cooking in the oven, the coppa roast will be a delicious alternative to the pork loin.
Furthermore, if you are a lover of cured meats, you can't help but try the seasoned coppa, called capocollo in Central-Southern Italy and coppa in Northern Italy. A unique and intense flavour, made even more special by the fact that it comes exclusively from our farm.
With our pork coppa, you will be able to delight your guests' palates with tasty and genuine dishes, prepared with the utmost care and attention to quality.

HOW TO COOK IT?
Explore the irresistible flavor of pork coppa, a fine cut that offers a true symphony of taste with every bite. Its softness and the right amount of fat make pork coppa an excellent culinary choice, perfect for those seeking an authentic and satisfying gastronomic pleasure.
To best prepare the pork coppa and delight your guests with an unforgettable dish, follow our culinary advice:
- Selection of the Cut : Choose a fresh, high-quality pork cut, characterized by a delicate marbling of fat which gives softness and flavor to the meat. Make sure the cup is very clean and free of cuticles or excess fat.
- Tasty Marinade : Before cooking the pork neck, prepare an aromatic marinade using ingredients such as minced garlic, fresh herbs (rosemary, thyme, sage), black pepper, olive oil and a splash of lemon juice or balsamic vinegar. Leave the coppa to marinate in the refrigerator for at least 2-4 hours, or even overnight, to allow the flavors to penetrate the meat.
- Slow and Sweet Cooking : Preheat the oven to a low temperature, around 120°C. Drain the coppa from the marinade and dry it with kitchen paper to remove excess liquid. In a non-stick pan, heat a drizzle of olive oil over medium-high heat and brown the coppa on all sides until lightly browned.
- Cooking in the oven : Transfer the cup onto a baking tray and complete cooking in the oven for approximately 3-4 hours, or until it reaches an internal temperature of approximately 65-70°C. This slow and gentle cooking will allow the meat to become soft and succulent, keeping its natural flavors intact.
- Resting and Slicing : Once cooked, let the coppa rest for at least 20-30 minutes before slicing. This will allow the juices to redistribute evenly within the meat, guaranteeing a succulent cup full of flavour. Slice the coppa into thin slices and serve immediately.
With these simple steps, you will be able to prepare an irresistibly soft, succulent and flavorful pork neck, perfect for a special dinner or a festive occasion. Enjoy your meal!
