HOW TO COOK IT?
Here is a delicious traditional Italian recipe that uses peppered pork cheek:
Pasta alla Gricia
Ingredients:
- 320g of pasta (preferably spaghetti or rigatoni)
- 150g of peppered pork cheek, cut into thin slices
- 50g of grated pecorino romano
- Freshly ground black pepper, to taste
- Salt to taste
Method:

Preparation of the Ingredients:
- Bring a pot of salted water to the boil and cook the pasta al dente following the instructions on the package. Remember to reserve some of the pasta cooking water before draining it.

Preparation of the sauce:
- In a large skillet, heat the peppered pork cheek over medium heat until crisp and releasing the fat. Make sure you don't burn it.
- When the bacon is crispy, generously add freshly ground black pepper to the pan. Continue stirring for about a minute to flavor the pepper.

Completion of the Dish:
- Add the drained pasta directly to the pan with the peppered bacon. Add a little pasta cooking water to create a creamy sauce.
- Add the grated pecorino romano and mix well until the pasta is evenly covered in the creamy sauce.
- Taste and add salt if necessary. Remember that bacon and pecorino are already quite salty, so make sure not to overdo it with salt.
