HOW TO COOK IT?

Here is a recipe for preparing Limousin beef tongue:

Limousin Beef Tongue in Gravy

Ingredients:

  • 1 Limousin beef tongue (approximately 1.5-2 kg)
  • 2 carrots, cut into large pieces
  • 2 medium onions, cut into wedges
  • 3 celery sticks, cut into large pieces
  • 4 whole garlic cloves, lightly crushed
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 teaspoon coriander seeds
  • Coarse salt
  • White wine vinegar
  • Flour to taste (optional)
  • Extra-virgin olive oil

For the sauce:

  • 2 tablespoons butter
  • 2 tablespoons of flour
  • 500 ml of meat broth
  • 2 tablespoons of tomato paste
  • Salt and freshly ground black pepper to taste

Method:

  1. Preparation of Beef Tongue:
    • Start by carefully cleaning the beef tongue, rinsing it under cold running water.
    • In a large pot, bring plenty of water to the boil with a splash of white wine vinegar and a pinch of coarse salt.
    • Add the beef tongue to the pot, along with the carrots, onions, celery, garlic, bay leaves, black peppercorns and coriander seeds.
    • Boil for 2-3 minutes, then reduce the heat and simmer gently for about 2-3 hours, or until the tongue is soft and easily pierced with a fork.
  2. Preparation of the sauce:
    • In a skillet, melt the butter over medium heat. Add the flour and mix well to create a roux.
    • Gradually add the meat broth, stirring continuously to avoid lumps forming.
    • Add the tomato paste and continue stirring until the sauce thickens slightly. Add salt and black pepper to your taste.
  3. Last Phase:
    • When the beef tongue is cooked, drain it and let it cool slightly. Then, remove the outer skin and slice it into thin slices.
    • Arrange the tongue slices on a warm serving plate and pour the prepared sauce over them.
  4. Service:
