HOW TO COOK IT?
Here is a simple recipe for cooking nerves:
Grilled Beef Nervetti with Green Sauce
Ingredients:
- 500g of beef sinews
- 2 tablespoons of olive oil
- Salt and freshly ground black pepper to taste
- Lemon juice (optional)
Green sauce:
- 1 bunch of fresh parsley, leaves only
- 2 tablespoons capers, rinsed
- 2 anchovies in oil, drained
- 1 clove of garlic
- 2 tablespoons red wine vinegar
- 4 tablespoons of olive oil
- Salt and freshly ground black pepper to taste
Method:
- Preparation of the nerves: Bring a pan of lightly salted water to the boil. Add the beef sinews and simmer for about 30-40 minutes, or until soft. Drain them and let them cool slightly.
- Preparing the green sauce: Meanwhile, prepare the green sauce. In a blender or food processor, add the parsley, capers, anchovies, garlic clove, red wine vinegar and olive oil. Blend everything until you get a smooth consistency. Add salt and pepper to your taste.
