HOW TO COOK IT?

Tripe is a traditional dish in many cuisines around the world and can be prepared in many ways. Here is a recipe for cooking limousine tripe:

Stewed Limousine Tripe

Ingredients:

  • 500 g limousine tripe (cleaned and cut into strips)
  • 2 tablespoons of olive oil
  • 1 large onion, finely chopped
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 3 cloves garlic, finely chopped
  • 1 cup tomato puree
  • 1 cup beef broth
  • 1 cup of red wine
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Red chili powder (optional)
  • Grated cheese (for serving)
  • Chopped fresh parsley (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and fry until translucent and soft.
  2. Add the minced garlic and continue to cook for another 1-2 minutes until aromatic.
  3. Add the diced carrots and celery and cook for a few minutes until they start to soften.
  4. Add the limousine tripe to the pot and mix well with the vegetables.
  5. Pour the red wine into the pan and let it cook for a few minutes until the wine has reduced by about half.
  6. Add the tomato puree, beef broth, bay leaf and dried oregano. Stir well to combine all the ingredients.
  7. Season with salt and pepper to taste and, if desired, add a pinch of red chilli powder for a spicy touch.
  8. Reduce the heat to medium-low, cover the pan with a lid and cook for about 1-2 hours, stirring occasionally, until the tripe is soft and the sauce has thickened.
  9. Taste and adjust salt and pepper if necessary.
  10. Serve the limousine tripe hot, garnished with grated cheese and chopped fresh parsley.
  11. Accompany the tripe with crunchy bread or a portion of polenta.
