Spring brings with it a breath of freshness and bright colors, and it's the perfect time to experiment in the kitchen with seasonal ingredients. Today I propose a dish that celebrates the flavors of spring: Pork Filet with Asparagus and Lemon . A simple but refined recipe, perfect for a Sunday lunch or a special dinner.
Ingredients (for 4 people)
-
500 g pork fillet
-
1 bunch of fresh asparagus
-
1 lemon (juice and grated zest)
-
2 cloves of garlic
-
2 tablespoons extra virgin olive oil
-
½ glass of dry white wine
-
Salt and pepper to taste
-
Fresh thyme or parsley to garnish
Preparation
1. Prepare the asparagus
Wash the asparagus and remove the hard part of the stem. Cut them into pieces of about 4 cm and blanch them in boiling salted water for 3-4 minutes. Drain them and set them aside.
2. Brown the fillet
In a large skillet, heat the oil with the crushed garlic cloves. Add the whole pork tenderloin and sear on all sides over medium-high heat until evenly browned.
3. Blend and cook
Pour the white wine into the pan and let the alcohol evaporate. Add the lemon juice, lower the heat and cover with a lid. Cook for about 15 minutes, turning the meat occasionally.
4. Add the asparagus
In the last 5 minutes of cooking, add the asparagus to the pan and stir to coat them with the sauce.
5. Finish and serve
Season with salt and pepper, then sprinkle with grated lemon zest and a few leaves of fresh thyme. Slice the fillet and serve with the asparagus and the cooking juices.
