Grilled chicken breast is a simple and light second course, ready in more or less 10 minutes but do you know all the tricks to prepare it perfectly?
Grilled brisket is a healthy and light dish, ideal for the whole family, both for those who want to reduce calories a bit, but also for children and the elderly: in fact, it is an easily digestible food. Preparing grilled chicken breast is very easy and quick but, regardless of the basic recipe , there are a couple of tricks and tips to know, to bring soft and juicy meat to the table and not risk the dreaded "shoe sole effect".
Preparation:
- Rinse and dry the chicken breast .
- If you prefer thin slices, cut them in half horizontally. Of course you can also buy pre-sliced chicken breast, available in our store.
- To make the chicken breast softer and tastier , before cooking it, you can brush it with a sprig of rosemary dipped in extra virgin olive oil (this will prevent it from drying out while cooking) or, if you have time, you can marinate it . 10 minutes to a couple of hours , in a marinade .
- When the meat is ready to cook, heat a grill pan or non-stick pan well, sprinkle the surface with a little salt (a very useful trick to keep the chicken from sticking) and then arrange the slices .
- If they are very high, cook them on low heat for about 8 minutes on each side. If, on the other hand, they are low, 4-5 minutes per side over medium heat is enough.
- Bring to the table, as desired, with lemon wedges.
Marinade ingredients:
Marinating chicken breast is always convenient, first of all it allows you to flavor the meat without weighing it down with ultra-caloric condiments and not letting it dry during cooking, moreover, it eliminates the typical smell of chicken that not everyone likes.
The marinade usually consists of a few ingredients:
- an emulsion that contains an acidic part , for example, lemon , balsamic vinegar , white or red wine ;
- a fat part such as extra virgin olive oil or yogurt
- aromatic herbs to perfume the meat;
- If you like or want to get an amber-colored chicken breast with a caramelized look, you can also add a little honey or soy sauce to the marinade.
A special and very simple marinade to prepare can be prepared with 2 tablespoons of extra virgin olive oil , 2-3 drops of Worcester sauce , sliced onion or garlic .
Tips and combinations with chicken breast:
For a complete and nutritious light dish you can serve the grilled chicken breast on a bed of lettuce, with flakes of Parmesan cheese and cherry tomatoes. Prepare a vinaigrette with 1 teaspoon of balsamic vinegar, 3 tablespoons of extra virgin olive oil, salt and pepper, pour them into a jar, close the cap, shake well and season the meat and vegetables.
