Grilled chicken breast is a simple and light second course, ready in more or less 10 minutes, but do you know all the tricks to prepare it perfectly?
Grilled breast is a healthy and light dish, ideal for the whole family, both for those who want to keep calories down a bit, but also for children and the elderly: it is, in fact, an easily digestible food. Preparing grilled chicken breast is very easy and quick but, regardless of the basic recipe , there are a couple of tricks and tips to know, to bring soft and juicy meat to the table and avoid the much-feared "shoe sole effect".
Preparation:
- Rinse and dry the chicken breast .
- If you prefer thin slices, cut them in half horizontally. Of course, you can also buy pre-sliced chicken breast, available in our store.
- To make the chicken breast softer and tastier , before cooking it, you can brush it with a sprig of rosemary dipped in extra virgin olive oil (this will prevent it from drying out during cooking) or, if you have time, you can marinate it for 10 minutes to a couple of hours in a marinade .
- When the meat is ready to cook, heat a grill pan or a non-stick pan well, sprinkle the surface with a little salt (a very useful trick to prevent the chicken from sticking) and then place the slices on top.
- If they are very tall, cook them on low heat for about 8 minutes on each side. If they are low, 4-5 minutes per side on medium heat is enough.
- Serve with lemon wedges, if desired.
Marinade ingredients:
Marinating chicken breast is always a good idea, first of all it allows you to flavor the meat without weighing it down with ultra-caloric condiments and not let it dry out during cooking, furthermore, it eliminates the typical chicken smell that not everyone likes.
The marinade usually consists of a few ingredients:
- an emulsion that contains an acid part , for example, lemon , balsamic vinegar , white or red wine ;
- a fatty part such as extra virgin olive oil or yogurt
- aromatic herbs to flavor the meat;
- If you like or want to obtain an amber-colored chicken breast and a caramelized appearance, you can also add a little honey or soy sauce to the marinade.
A special and very simple marinade can be prepared with 2 tablespoons of extra virgin olive oil , 2-3 drops of Worcester sauce , sliced onion or garlic .
Tips and combinations with chicken breast:
For a complete and nutritious light dish , you can serve the grilled chicken breast on a bed of salad, with flakes of parmesan cheese and cherry tomatoes. Prepare a vinaigrette with 1 teaspoon of balsamic vinegar, 3 tablespoons of extra virgin olive oil, salt and pepper, pour them into a jar, close the lid, shake well and season the meat and vegetables.
