MUSTARD GLAZED RIB.

The mustard-glazed steak is dedicated to meat lovers and, above all, bbq lovers. When it's time for the next barbecue you can impress your friends with a rib of beef cooked to perfection, with the added touch of honey mustard that will bring out the best flavor.

Served with tasty roast potatoes, the Glazed Steak with Mustard Gravy is sure to be a hit on your table!

INGREDIENTS:

- rib of beef of 1 kg
- Honey mustard 50 g
- Extra virgin olive oil 10 g
- Salt up to 1 tbsp
- Black pepper 1 tbsp

To prepare the mustard-glazed steak, first take the beef out of the refrigerator and leave it at room temperature for at least an hour. Light the barbecue and bring it to 190°; to maintain this temperature, just keep the burners on. Now wash the potatoes and cut them into wedges without removing the peel , then pour them into a bowl and season with oil and salt .

Mix well and transfer the potatoes into a pan. Add the rosemary sprigs and place the pan on the barbecue.

At this point you can dedicate yourself to the meat: sprinkle a cutting board with salt and pepper, then press the rib on it to make the seasoning adhere to both sides. Place the rib on the barbecue in the area with the burner off and cook indirectly for about 70 minutes, measuring the core temperature with a roast thermometer: it must reach 50°

After this time, prepare the sauce: pour the honey mustard and oil into a bowl and mix well. When the meat has reached the right temperature, brush the surface with the mustard sauce. At this point, transfer the rib to the area with the burner lit, turning it over to the other side with a pair of kitchen tongs.

Cook directly for 7 minutes, then brush the other side with the mustard sauce as well. Turn the rib over again and cook for another 3 minutes, always directly. Once cooked, transfer it to the cutting board and let it rest for 5 minutes before cutting it. At this point the potatoes will also be ready, so you can plate and serve your glazed steak with mustard sauce!
