Stuffed Beef Rolls: A Tasty Recipe with Peppers

Stuffed beef rolls are a tasty and versatile dish that will win over everyone's palate. Enriched with peppers, they become even tastier, adding a sweet and colorful note to the recipe. Ingredients for 4 people

For the rolls:

  • 8 thin slices of beef (about 600 g total)
  • 8 slices of raw ham or speck
  • 100 g of stringy cheese (scamorza, fontina or provola)
  • 1 large bell pepper (red or yellow)
  • 2 tablespoons breadcrumbs
  • Chopped fresh parsley
  • 1 clove of garlic, minced (optional)
  • Salt and pepper to taste
  • Kitchen string or toothpicks

For cooking:

  • 2 tablespoons extra virgin olive oil
  • 1 glass of dry white wine
  • 300 ml of tomato puree (optional, for a sauce variation)
  • 1 chopped onion

Preparation

  1. Cut the peppers into thin strips, removing the seeds and internal filaments. Sauté them in a pan with a drizzle of oil for a few minutes, until they are soft. Set aside.

  2. Mix the breadcrumbs with parsley, garlic, salt and pepper in a bowl.

  3. Prepare the meat slices : place a slice of raw ham on each one, a sprinkling of the breadcrumb mix and a few strips of pepper. Add a cheese stick to the end of the slice and roll up, forming the roulade. Secure with kitchen string or a toothpick.

  4. Heat oil in a large skillet and sauté chopped onion until golden brown. Add the rolls and sear on all sides to seal in the meat juices.

  5. Blend and cook : Blend with white wine and let the alcohol evaporate. For a variation on the sauce, add the tomato puree, a pinch of salt and pepper. Cover with a lid and cook on low heat for 20-25 minutes.

Serving Tips

The rolls go beautifully with a side of baked potatoes or grilled vegetables. You can also prepare a richer version by inserting other vegetables into the filling such as zucchini or sautéed mushrooms. The sweet peppers enhance the flavor of the meat and cheese, making every bite an explosion of flavor.
